Whenever my family sits together for a Polish meal, we always have hot grated beetroot, mash made with obscene amounts of butter and a cucumber salad as staples.
This is an easy, quick and fresh salad and an usual way of serving cucumber.
TIP If you can, use an organic cucumber.
Serves 4
1 cucumber
1 tsp dill leaves, finely chopped
2 tbs snipped chives
6 tbs single cream
sea salt and pepper
Slice the cucumber on a mandolin or very thinly with a sharp knife and place it in a bowl.
Sprinkle over a little sea salt and leave it for twenty minutes.
Remove all the water by gently squeezing the cucumber with your hand.
Stir in the cream with the chives and dill. Finish with a good grinding of black pepper.
