A very pretty dish that takes about fifteen minutes of your time.
TIP If you don’t like heat, omit the chilli. The brie should be nice and ripe.
Serves 4 as a starter
Preheat the oven to 200oC
200gr brie
a good handful of pistachios, shelled and chopped finely
1 small glass of wine 125ml
1 punnet of raspberries 150gr
1 tsp honey
1 flat tsp of chilli flakes
4 tsp olive oil
1/2 tsp of flaky sea salt
Cut the brie into small squares. Place on foil in a baking tray. Pour over the oil and coat the squares all over.
Pat the pistachios onto the cheese.
Place in the oven for 4 minutes. Leave in the oven till the sauce is done. Heat the white wine till reduced by half. Add the raspberries,
honey, chilli and salt. Simmer for five minutes. Sieve the sauce if you want a smooth finish.
Divide the brie between four plates and pour over the sauce.
