Tuna with Lime, Chilli and Coriander

This starter takes about ten minutes to prepare. It’s fresh, light and packed with a punch.

 

TIP If you don’t have a fishmonger it’s fine to buy a pack of two steaks from your supermarket  as they are cooked in lime. I buy ‘taste the difference’ yellow fin tuna steaks from Sainsburys.

You can also add diced ripe tomatoes to the finished dish for an extra fresh and sweet element.

 

Serves 4

2 medium sized tuna steaks

8 tbs of extra virgin olive oil

1 banana shallot, finely sliced

1 medium red chilli, deseeded and diced

juice of two limes

small handful of coriander, finely sliced

good pinch of sea salt

Put this together five minutes before you intend to eat as you don’t want to overcook the tuna in the lime.

Slice the tuna steaks thinly and arrange in the middle of four plates. Pour over the lime, top with the coriander,scatter the shallots around the steaks,  pour over the oil and finish with the sea salt.
