Smoked Salmon with Spicy Tomato Salsa

This simple dish offers a wonderful balance between the richness of the salmon and the acidity of the tomatoes and punch of the chilli and makes a lovely starter that takes ten minutes to put together.

TIP Even though smoked salmon is quite expensive, it’s worth paying a little extra for a great brand like Goldsteinsalmon.com or M and S best smoked salmon.  You only need 25gr per person.

Serves 4

1 pack smoked salmon 100gr
12 best quality cherry tomatoes
1/2 small shallot
1 green bird’s eye chilli
handful of coriander leaves
juice of a lime
1 tbs extra virgin olive oi
pinch of sea salt

Dice the cherry tomatoes and the shallot. Finely slice the coriander and chilli and place it all in a bowl.
Five minutes before serving, stir in the lime, olive oil and salt.
Arrange the salmon on plates and sprinkle over the salsa.
Pair with the pale hue of a Provence Rose such as Domaine de Paris from Laithwaites.
