Spicy crab salad with lime and harissa

Simplicity itself, this is a quick, pretty and very satisfying dish which makes an elegant starter for a dinner party.

TIP Use only fresh crab. I used half brown and half white but if you have a preference for either that’s fine. It’s expensive but you don’t need much as its very rich.

Serves 2

100gr fifty fifty crab meat from Waitrose
2tbs good quality mayonnaise
1 tsp harissa paste
1 lime
A handful of pea shoots (optional)
Small handful of shredded organic carrots
6 slices of cucumber
2 tbs of diced tomatoes
4tbs of extra virgin olive oil
1 tbs of balsamic vinegar
Black pepper

Mix the crab with the lime juice.
Place the pea shoots in the middle of each plate and spoon over the crab meat.
Fold the harissa into the mayonnaise and gently lay on top of the crab meat.
Scatter the diced tomatoes and carrots round the crab, divide the cucumber between plates, pour over the olive oil and balsamic and finish with a generous grinding of black pepper.
