Mini Stilton and Mature Cheddar fondu pots

Experimenting on a nine course British tasting menu to celebrate the imminent coronation, I thought a twist on the cheese course would be fun and more to the point, a huge hit. Well, it with me.

TIP If you don’t like Stilton or cheddar, you can use just about any hard cheeses.

Serves 6

100gr grated mature cheddar
100gr stilton, roughly chopped
1 glass of dry white wine (175ml)
1 flat tsp of cornflour, dissolved in 4 tbs cold water
8 tbs single cream
Sourdough bread, toasted and cut into fingers

Place the cheese into a small saucepan, pour in the wine and heat on low till bubbling.
Stir in the cornflour, cook for a minute, add the cream and stir for a further minute.
Pour the fondu into espresso cups and arrange three slices of the fingers on a plate with the cups.
