Baked duck eggs with spinach, gruyere, goat’s cheese and cheddar

The ultimate in decadence, this recipe needs very little skill yet for me it is one of the finest breakfasts to serve.

I use duck eggs but you can use large organic eggs instead.

serves 1

1 duck’s egg
large handful of wilted, buttered spinach
4 tbs each of grated mature cheddar and gruyere
1 tbs of soft goat’s cheese
6 tbs of double cream
Black pepper
Oven proof small bowl

Preheat the oven to 200o or 180o fan assisted.

Place the spinach in the bottom of the bowl and make a hole in the middle. Crack in the egg, dot the goat’s cheese round the outside, pour over the cream and top with the cheeses.

Bake in the oven for 15 minutes, remove and finish with a good dusting of black pepper.
Serve with reassuringly expensive sourdough.
