I don’t like to use very large prawns for this dish. The very sweet North Atlantic prawns
are perfect in size and taste. Fresh not frozen of course.
TIP Make the sauce in advance and keep it in a screw top jar in the fridge. It will keep for at least four days. I use old fashioned cocktail glasses for this. It looks so pretty.
700gr prawns, unshelled
1/2 iceberg lettuce
8 tbs best quality mayonnaise
3 tsp tomato ketchup (organic)
6 drops Tabasco
juice of 1/2 a lemon
pinch of paprika
Shell the prawns. In a bowl mix the mayo, ketchup, Tabasco and lemon juice.
Slice the lettuce very thinly. Line four cocktail glasses with a little lettuce, top with half the mayo, then half of the prawns. Repeat the process.
Dust each glass with paprika. Serve with very thin slices of brown bread and butter.
