Croques Madame by M. Kuehn

Croques Monsieur you may be familiar with, but what is a Croques Madame? Well, it’s a Croques Monsieur with lots of extras. Just like us women really.
I struggle to know how it is that French women are elegant, thin, classy and young looking. If I ate the above more than once a month I’d be the size of a house.
I think it’s because the normal French diet does a lot of food combining and it works. When you see a French woman sashaying into a restaurant, there won’t be any Gargantuan portions on her plate. The culture of drinking tons of water is almost part of her genes.
Anyhow, this toasted piece of yumptiousness contains, ham, cheese, bechamel and a fried egg.
Personally I can’t think of a nicer snack to indulge in when you are cheesed off, settling down to an old weepy, soaking up a few too many at midnight or just plain greedy. The result is just the same.
Serves 2
4 slices of thick white bread
2 slices of top quality ham, thinly sliced
butter to spread on top of the bread
4 thin slices of Gruyere
1 tbs Maille Dijon mustard
2 eggs
2 tbs olive oil
4 tbs bechamel sauce (see recipe)
4 olives (optional)
Heat a griddle pan. Spread the bread with the mustard, top with ham, Gruyere, close the sandwich and spread with the butter on all sides.
Place the sandwiches onto the hot griddle and toast. Meanwhile, heat your bechamel, fry the eggs in oil. Place on top of the sandwich and spoon over the bechamel. Finish with the olives. French yumminess.
