Lemon Drizzle Cake by Zina Manda

This is a classic cake that is so easy to make and even easier to eat. It also makes a great gift. When you have to bake every day, you want to make cakes that take minimum effort but deliver maximum wow. Our customers tell us that this should be a keeper on our cafe menu.

Ingredients

225 g soft butter
225g caster sugar
225g self-raising flour
4 eggs
Zest of 1lemon

For the drizzle

85g caster sugar
Juice of 1.5 lemons

Cream together the butter and sugar until they look fluffy. Add the eggs one at a time and incorporate them. Sift the flour into the mixture, add the lemon zest and using a spatula incorporate the flour gently into the mixture, try not to over mix and knock out the bubbles.

Line a loaf tin with greased parchment, pour the mixture in and bake for 45 mins at 175C or 160C if using a fan oven.

To make the drizzle, just mix together the lemon juice and sugar. The cake will be baked when a cocktail stick comes out clean. Leave the cake in the tin and make some holes using the cocktail stick. Spoon the drizzle over the cake whilst it is still hot.

This will make 10 generous slices. Enjoy!
