I was at a bash not long ago and was presented with a dip that was clearly shop bought – a disgusting gloop of blandness which was just nasty.
I don’t get it. Guacamole is the easiest thing on the planet to make and tastes a thousand times better than the shop bought variety. Lazy bones take note.
Serves 8 as a dip
2 large ripe avocados
1 medium ripe tomato
1 clove of garlic, crushed
juice of a 1/2 a lemon
1 medium red chili, finely diced
2 tbs extra virgin olive oil
pinch of sea salt
dusting of paprika
Peel and lightly mash your avocados. You want some texture – unlike the baby food you get in supermarkets.
Deseed and dice the tomato. Fold into the avocado along with the garlic and the chili, sprinkle in the salt, give it a good stir and finish with a dusting of paprika and
the olive oil. Serve with hot mini pitta slices.
