Making your own chutney is rather satisfying. It also makes a great edible gift. I serve this with several other chutneys and pickles as a starter with a mountain of poppadoms. Great sharing food.
1 large bunch of mint leaves
1/2 bunch of coriander leaves
2 shallots
2 birds eye chillis
1 tsp tamarind pulp
1 tsp grated ginger
1 tsp sea salt
1 tsp sugar
Juice of 1 lime
Throw everything into a processor and whizz till all the ingredients are incorporated. It’s as easy as that.
