Salmon with a spicy crust by M. Kuehn

Organic salmon with a few spices is rather special – it’s simple fare and is simplicity itself in the execution of this dish. Perfect with a pea and coriander puree and a cucumber raita. Very low in carbs and high in protein and moreover, taste.
TIP Try wild Alaskan salmon from Waitrose.
Serves 2
Two fillets of salmon
1/2 tsp turmeric
1/2 tsp paprika
1/2 tsp cumin
1/2 tsp coriander
1/4 tsp garlic powder
juice of a lemon
good pinch of sea salt
a little oil for frying
Mix all the spices and salt together. Dust your salmon fillets in the mixture, making sure they are well coated.
Heat the oil in the pan and when very hot, place the fillets in, skin side down.
Turn down to medium after half a minute and continue to cook for another minute. Carefully turn the fillets over, cook for another minute and turn the heat off. Keep the salmon in the pan as it will continue cooking.
When the opaque colour in the middle has gone, the salmon is ready.
