Green Conservolia olives – a wonderful nibble, made even better by the addition of a few ingredients. For the minute effort put in you get a disproportionate amount back. You can’t say that too often these days…
140gr green olives
1 red chilli, finely diced
1 fat clove of garlic, slithered
juice and zest of half a lemon
a good glug of extra virgin olive oil
a few mint leaves, finely chopped
Simply place the olives in a pretty serving bowl, chuck everything in it and marinate for a couple of hours.
