Caesar salad dressing by M. Kuehn

I know you’re probably tired of hearing this, but honestly you won’t ever want to buy a commercial bottle of this dressing again. It is child’s play, will last for a couple of weeks in the fridge and takes five minutes to prepare.

Makes enough for about 8 servings

4 large tbs very good quality mayonnaise

1 heaped tbs of grated parmesan

2 anchovy fillets

juice of half a lemon

1 fat clove of garlic, crushed

1/2 flat tsp of Dijon mustard

a little black pepper

a few dashes of Worcestershire sauce

a small glass of water (100m)

Place the anchovy fillets in a bowl and add the lemon juice. Crush them till they have broken down to a paste. Stir in the other ingredients, leaving the water till last. Pour in a little at a time till you get a slightly thinner consistency than single cream. Pour into a jar and keep refrigerated.
