‘Borracho’ Spanish cheese by M. Kuehn

I’ve been frantically looking at suppliers of Spanish produce online in the UK and sadly have not been able to source this quite delicious cheese. It’s my mission to find it on my return to England and a few lucky people will be able to sample it when I get back to Blighty.
It’s sharper than Manchego and ends with a gloriously deep flavour that lingers in the mouth. It’s a wonderful addition to any dinner party cheeseboard and spectacularly good with port. You can eat it on its own or with a tart chutney and some Peter’s Yard biscuits. Stunning.
