Cucumber and Dill Salad by M. Kuehn

Cucumber – refreshing, a great addition to drinks and as it’s quite bland, it can take some punchy flavours to enhance it.

This salad is very pretty indeed. It takes five minutes to make and is a lovely addition to any picnic or BBQ.

Serves 4

1 cucumber
1 tsp sugar
4 tbs rice wine vinegar
handful of dill leaves
pinch of sea salt
black pepper

Cut the cucumber in half. Cut each half again length ways. Using a vegetable peeler, peel ribbons of cucumber and place in a bowl. Let it rest for ten minutes and drain.

Mix together the sugar, salt and the vinegar to dissolve. Add the dill, pour over the cucumber and finish with a good grinding of black pepper.
