Smoked Salmon Pate by M. Kuehn

Keeping things simple, easy to produce and ahead of time is becoming more and more inviting in our busy lifestyles.

Even the tightest of budgets can afford this lovely starter. It doesn’t require very much smoked salmon and the addition of sweet cherry tomatoes and apple give it another dimension.

TIP Serve this with toasted Poilane bread (from Waitrose) if your pocket can afford it.

Serves 6

60gr smoked salmon

3 heaped tbs of cream cheese

6 ripe cherry tomatoes

half a pink lady apple, peeled

1 small shallot

6 chives

2 tbs olive oil

juice of half a large lemon

paprika to dust

Place everything into a food processor ( apart from the paprika)  and whizz for a minute.

Divide into individual ramekins and finish with a little paprika and if you wish, a little more olive oil.
